PNG or JPG for PDF pages?

PNG keeps text and lines perfectly sharp but makes larger files; JPG is smaller and fine for pages with photos.

Is my PDF uploaded?

No. The PDF is read and processed in your browser with PDF.js and pdf-lib. It never leaves your device.
